John Ciborski, new Executive Chef at Bix's

Bix's continues to be one of the coolest spots in town to wine, dine and spend some time! It's new chef and man in charge is John Ciborski. He delighted locals for years with his gourmet art at the 4 Star Pegasus Room at the Alexis Park. Chef John gives us a special recipe for Duck Breast with vodka-blueberry BBQ sauce. Do try it at home:

  10 or 12 oz Duck breast
  1 waffle
  wild rice mix
  1 oz vodka
  3 oz of gourmet BBQ sauce
  1/4 cup of fresh blueberries
  1 chopped green onion

Marinate duck in BBQ sauce for at least 2 hours. Sear it "skin side down" on a charcoal broiler until caramelized (about 3 minutes). Turn and broil fowl for 2 more minutes. Finish in oven until medium rare or your preferred darkness.

Use a standard waffle mix and maker to make 1 waffle. Add 1/2 cup of cooked wild rice to mix. Make "wild rice" waffle.

Warm blueberries in a sauce pan. Add vodka and light with a match. BE CAREFUL OF ALCOHOL FLARE UP. Extinguish and add BBQ sauce. Hold.

Place waffle on plate. Slice duck thin and "shingle" on waffle. Cover with sauce. Garnish with chopped green onion.
