Heralded NY City Chef Charlie Palmer and his team prepare some of the finest progressive American cuisine in the country. The architecture here is phenomenal. There's also a four-story, glass-enclosed tower of wine with a list that could be among the best in the country. $70.00/person.

Buccaneer Bay Club

This should be the dining highlight of most trips to Vegas. The decor is "exotic pirate." The room overlooks the popular street battle in front of the hotel, although only window tables get full view. First-class buffalo prime rib and pheasant. The best comes at the end of the night--prices are moderate here--$35.00/person. Reservations a must, and usually should be made several days in advance.

Drai's
Barbary Coast Hotel - Tel: 737-0555
Drai's is a neatly appointed eatery in the basement of the Barbary Coast Hotel. The menu ranges from Italian to southern French. Try the seared jumbo scallops with citrus ginger sauce. Special late night entertainment and menu until 6am. $40.00/person.

Eiffel Tower Restaurant

You'll enjoy the view and romance from the 11th story of this 50 story half-sized replica of the Paris landmark. Classic French cuisine prepared by award-winning Chef Jean Joho and staff. $50.00+/person.

Fiore

An exciting menu every week, with food served from an exhibition kitchen. Recent special s included a charred tuna carpaccio, pheasant ravioli with prosciutto and sage cream sauce, along with flowers garnishing dishes that were edible! As always in a Rio room, the service is first-rate, and the new wine list is even better. $36.00+/person.

The Embers

A classic Strip gourmet room with some modest prices. Try the quality roast Long Island duck. $20.00/person. Call ahead.

Gatsby's

Personable chef Terrance Fong creates some wonderful California-French cuisine. The decor is stunning. Expect to pay close to $70.00/person, but more with its outstanding, but expensive wines.

Isis

Glass-enclosed Egyptian artifacts are everywhere and so is the wait-staff. Service here is top-notch. Try the grilled Veal scaloppini and Oysters rubbed in chili! A classic date or special occasion place. $36.00 per/person.

La Rotisserie De Artistes

A strikingly beautiful restaurant with a menu that features succulent, slow roasted meat, fish, and poultry. Dine on the "mezzanine" level overlooking the main dining room. $35.00/person.

Le Cirque

The first spin-off of arguably the most famous restaurant in the United States. The finest in French food and service. If you go, take your coat and tie or they'll give you one! $55.00+/person.

Michael's
Barbary Coast - Tel: 702-737-7111
If you can get into Michael's, you might have the "culinary experience" of your life. At least 4 servers will wait on you, and they do it almost perfectly. The "lit up" Shrimp cocktail is wonderful, as is the veal chop Florentine. $75.00+/person.

Monte Carlo
Desert Inn - Tel: 702-733-4444
The atmosphere here resembles what you might find in a stately French castle. Beautiful gardens and a pool. It's one of the most romantic rooms in the valley. Upscale Continental cuisine. $60.00+/person.; call for reservations.

Napa

With a world famous chef, Jean-Louis Palladin, and arguably the finest wine celler in the world, Napa is the leader among the growing wave of the gourmet restaurants calling Vegas home. A nice gourmet entry by the Trop specializing in tableside service. Great salads whipped up before your eyes. Try the Breast of Capon Kiev. About $26.00/person.

Postrio
The Grand Canal  Shoppes at The Venetian - Tel: 702-796-1110
Wolfgang Puck brings American Cuisine with Asian and Mediterranean influences to The Grand Canal Shoppes. The menu changes daily, and features such items as grilled quail with spinach and soft egg ravioli, foie gras terrine with fennel and crispy fried scallion. Also gourmet pizzas, fresh pastas, and handmade pastries. Both a casual bistro-style cafe along "The Piazza" and an elegant dining room. $19.00/person for lunch. $36.00/person for dinner.

An exceptional gourmet room that changes its menu with the seasons. One of the only houses in town that satisfies diners who want or need low-fat dishes. $50.00+/person.

Spago

The menu changes daily and highlights Classical French, Asian, and Italian cooking and flavorings. Try the superb pizzas and the desserts. At least $40.00+/person, but less in the cafe that overlooks some of the best people watching in the world!
