

Eric Schuiller, Executive Chef of Paris, Las Vegas Chef Eric Scuiller is the Executive Chef of one of the most exciting resorts now
taking shape on the most exciting culinary Boulevard in the World - The Strip, in Las Vegas! Chef Eric and staff are now assembling a world-class dining adventure at Paris - a Hilton Hotel/Casino. Chef Eric is a native of the Brittany area of Northwestern France. He begun his culinary jouney at the selective Hotel School of Chappal in Quimpere" at the age
16. Chef Eric worked in several hotel restaurants before completing his studies. A penchant for travel and resorts led to positions as Executive Chef at 12 Club Med Resorts, including Switzerland, Greece, Israel, Mexico and the U.S.A. Chef Scuiller would later return to "classic cuisine" with a 2 year stint as Assistant Executive chef at the Princess Restaurant in Beverly Hills. Eric worked
under Chef Maurice Pequet and says he greatly influenced his career. Eric would also land a position as Executive Chef of the European class "Ft. Wayne Hilton," before "enjoying the beach" with his wife Cheryl and children as the chef of the Coccolaba Plantation Resort on the Island of Anguilla in the British West Indies. Chef Eric would travel to Vegas upon the recommendation of Maurice Pequet. He
would work first for popular French restaurateur Georges LaForge at the old Savoy. Chef Eric was recruited by Bally's in 1990, as an assistant to the talented Austrian Chef Werner Zeffer. At Bally's, Scuiller ran the award-winning Sterling Brunch, which is consistently recognized among the top 10 brunches in the nation. During the period of 1992-1996, Chef Eric also taught weekly cooking classes in French/Gourmet cuisine at Bally's. Chef Eric says part of the success of the Sterling Brunch is preparing each dish, "One to one--communicate your passion to those working wit you, discuss and evaluate each item, and prepare it accordingly. I rank every dish and if it does not rank high, it will not re-appear on the brunches' menu." Chef Eric says "Paris, Las Vegas will be part of the explosion of fine dining in the
valley. We will adapt each restaurant to a different level of customer, but always with the French taste. To define your cuisine you must define your customer and satisfy their expectation." For example, he says Le Village Buffet will take buffet dining to a higher level, offering the cuisine of the 5 regions of France at separate live action stations: Alsace, Brittany, Burgundy, Provence and Normandy. At the top of the replica of the Eiffel Tower, Chef Eric is helping to create a premier
gourmet French restaurant, reportedly under the guidance of a Three Star Michelin Chef. Other Paris highlights include "La Rotisserie--a 2 story, art deco dining room serving roasted meats, fish and poultry--and La Provence, which will feature Mediterranean cuisine native to the Provence region.
